Pork cutlets made from Pork spice sausages

I could not walk away from Pork spice sausages of The Bangalore Ham Shop without telling you about turning them into cutlets. Did you feel like a light bulb came on moment? Well I did feel that way the day I realized that these delicious pork spice sausages can so easily be turned into cutlets. The cutlets that I am talking about are the ones with the cooked mined meat, dipped in egg, coated with bread crumbs and fried. That means it’s not that cut of meat, cutlet nor the schnitzel. These cutlets make a great appetizer but I love it as a side. Hot steamed white rice, ghee, sambar and cutlet on the side. Yes, a meat eating south Indian’s delight. This is the good stuff. Here’s how I make them.

What you need:

250 grams of Pork Spice sausages from the Bangalore Ham Shop

2 Medium sized potatoes, boiled

1 medium sized onion finely chopped

1 Tablespoon to chopped coriander leaves

1 Large green chilli finely chopped

Bread crumbs

Egg

Method:

Step 1 : Cook the pork spice sausages , do not fry

Step 2 : Remove the sausage skins and set the filling aside

Step 3 : Mash the potatoes

Step 4 : Add the chopped coriander leaves, onions , green chilies, meat and salt to the mashed potato and mix well

Step 5 : Make into cakes , dip in egg and coat with bread crumbs. Then shallow fry the cutlets.
